En la llista d&#8217;ingredients d&#8217;una recepta solem trobar nom\u00e9s s\u00f2lids i l\u00edquids&#8230; mai s&#8217;escriu per afegir un gas. Aix\u00f2 nom\u00e9s \u00e9s aparent, perqu\u00e8 els gasos s\u00f3n essencials per alleugerir moltes masses.<br>Com es pot generar un gas dins d&#8217;una massa? Necessites un agent que el produeixi.<br>Durant mil\u00b7lennis el llevat ha estat l&#8217;\u00fanic mitj\u00e0 conegut i utilitzat per fer una massa tova.<br>Qu\u00e8 s\u00f3n els llevats i com es creen? Qu\u00e8 tenen a veure amb els gasos? Els llevats s\u00f3n microorganismes que prenen el seu nom del verb llat\u00ed &#8220;levare&#8221;, que significa elevar.<br>Volem descobrir junts com es crea i qu\u00e8 produeix el llevat m\u00e9s antic del m\u00f3n?<br>La massa mare.<\/p>\n\n\n\n<p><strong>Activitat<\/strong><br>Els nois es divideixen en grups redu\u00efts (3\/4).<br>Cada grup haur\u00e0 de dividir les tasques des del principi (pastar, documentar amb tel\u00e8fon m\u00f2bil o un altre dispositiu digital, planificar el treball i recollir la informaci\u00f3 en els dies de durada de l&#8217;activitat).<br><br>1) Barregem la farina amb aigua i afegim una culleradeta de mel. Posem aquesta massa en un pot de vidre. Tanquem-la amb una gasa humida i esperem 48 hores.<\/p>\n\n\n\n<p><strong>Nota per al professor:<\/strong><br>als estudiants se&#8217;ls pot ajudar a planificar el treball a trav\u00e9s d&#8217;una s\u00e8rie de preguntes.<br>\u2022 Qu\u00e8 van fer<br>\u2022 Qu\u00e8 esperen<br>\u2022 Resultat en totes les etapes<br>\u2022 Preguntes plantejades<br>El llevat natural (mare) neix deixant que la farina i l&#8217;aigua s&#8217;acidifiquin; s&#8217;alimenta dels sucres presents a la farina, desencadenant un proc\u00e9s de fermentaci\u00f3. Per assegurar l&#8217;\u00e8xit afegim mel (activador).<br><\/p>\n\n\n\n<p><strong>Preguntes d&#8217;est\u00edmul:<\/strong><br>Perqu\u00e8 la mel? Es poden utilitzar altres activadors?<\/p>\n\n\n\n<p>2) Al cap de 2 dies pesem 100 grams de massa, afegim 100 grams de farina i 50 grams d&#8217;aigua, tanquem amb gasa i esperem 48 hores m\u00e9s. Repetim a aquest ritme durant 10 dies.<br><\/p>\n\n\n\n<p><strong>Nota per al professor:<\/strong><br>Quan la massa comen\u00e7a a fermentar, s&#8217;inicia una transformaci\u00f3 qu\u00edmica i es creen &#8220;bombolles&#8221;.<br>La fermentaci\u00f3 biol\u00f2gica (pasta \u00e0cida) \u00e9s en primer lloc una fermentaci\u00f3 l\u00e0ctica; a m\u00e9s d&#8217;alcohol i di\u00f2xid de carboni, tamb\u00e9 es produeixen \u00e0cid l\u00e0ctic i \u00e0cid ac\u00e8tic. Ja passats 48 hores la massa ha de comen\u00e7ar a pujar.<br>Al final dels 10 dies el llevat ha de ser bastant l\u00edquid i ple de bombolles.<br><\/p>\n\n\n\n<p><strong>Preguntes d&#8217;est\u00edmul:<\/strong><br>\u2022 Com veig que s&#8217;ha desencadenat la fermentaci\u00f3?<br>\u2022 Puc observar di\u00f2xid de carboni?<br>\u2022 Com que t\u00e9 una olor \u00e0cida, de qu\u00e8 dep\u00e8n? (per alcohol) Quines altres aromes podem distingir?<br>\u2022 Intentem escriure en forma de f\u00f3rmula qu\u00edmica el que s&#8217;observa.<\/p>\n\n\n\n<p>Al final de l&#8217;experiment cada grup podr\u00e0 comunicar el seu treball als seus acompanyants, a trav\u00e9s d&#8217;una presentaci\u00f3 multim\u00e8dia tractant de donar raons cient\u00edfiques al que s&#8217;ha observat i al resultat obtingut. Quines preguntes va provocar l&#8217;activitat i com es va intentar respondre?<br>Qu\u00e8 ha anat malament i per qu\u00e8? Qu\u00e8 es pot fer d&#8217;una altra manera?<br><\/p>\n\n\n\n<p><strong>Nota per al professor:<\/strong><br>Hem apr\u00e8s a observar el que est\u00e0 passant al nostre voltant per no donar-ho per fet i fer-nos preguntes. Ja no mirarem el pa de la mateixa manera, ara sabem d&#8217;on ve!<br>\u00c9s el resultat d&#8217;un llarg proc\u00e9s. necessita un activador, per ser iniciat; a l&#8217;interior hi ha una cosa que no esper\u00e0vem i per aix\u00f2 no vam poder veure: un gas.
